Nutritious Children friendly Lunch box biscuit.
Molasses and Oat Biscuit
Ingredients
250g cooked chic peas (equivalent to a 400g tin with liquid removed)
½ cup Unhulled Tahini paste
2 tsp coconut oil - extra if needed
1 tsp cinnamon
¼ cup Molasses
1 tsp baking powder
Pinch of salt
Mix together in a food processor and add to ingredients listed below.
In a large bowl add these ingredients
½ cup Desiccated Coconut
1½ cups Oat Flour - I grind whole oats to flour
1 cup Whole Oats
100g chocolate chips
Method
Mix well with your hands.
Take a heaped tablespoon full of the mixture, roll into balls, flatten with a fork and place onto a baking tray with a sheet of greaseproof paper laid out on it.
Bake at 170 deg C for 10 to 15minutes, watching that the cookies don’t burn.
Leave on the tray until cool.
If you are able to resist them they can be kept in an airtight container or frozen.
