The Zesty Lemon School friendly Biscuit

Zesty Lemon Biscuit

This bite size biscuit was created for brain health. The essential fats, protein and nutritional supply in each bite sized biscuit are optimal for growing bodies.

Ingredients

¾ cup Millet puffed

¾ cup Oats whole

½ cup Dried Cranberries

¼ cup Pumpkin seeds

¼ cup Sesame seeds

¼ cup Honey

100g coconut oil

2 medium sized eggs

1 lemon zest

½ cup oat flour

1 tsp bicarb soda

Please note these are school friendly so can be put into school lunch boxes. They also can be interchanged with the ingredients / sultanas for cranberries, quinoa flour and flakes to make it gluten free.

Method

Preheat oven to 170deg C.

In a large bowl mix all ingredients together.

Make sure you mix in well; you may need to use your hands.

Take a heaped tablespoon full of the mixture, roll into balls and place onto a baking tray that has a sheet of greaseproof paper laid out on it.

Bake for 10-15minutes, watching that they don’t burn.

These are best kept in an airtight container in the fridge or frozen. They can be taken out as needed for lunch box fillers.

This recipe is for 30 small biscuits.
